This is one of those brilliant ideas that gave me so much satisfaction. In the afternoon I went to my local supermarket to buy something for dinner. I am sure that this happens to you too , there are evenings when you do not know what to eat, you do not want to cook, but hunger is not missing! Here in Italy, many people in these circumstances, go to the Pizzeria and take home a beautiful pizza.  There are also people who choose some readymade frozen meal (yes, even here in Italy ). Instead, I wandered around the supermarket (honestly, the idea of the pizza came to me too), looking for inspiration. I looked around for ages not buying anything. Then I stop in front of the cracker section (never having used them in my life). I starred at the box and studied them … a real crazy woman. Step 2, from there I went to the cheese counter,  talked to the lady and chose a couple of things. Sorry, I really don’t want to make this story too long….but anyway, I  bought a couple of other ingredients, now my hunger was really growing  and I went  home. I put all the ingredients on the kitchen table and I start to compose. Nick skeptical, as always, made his comments (  BUT WHAT IS THAT’???- … …) and I patiently continued to compose. I put in the oven my creation , and  ECCO QUA, look what came out, a zucchini lasagna express, ready in 15 minutes. What a great satisfaction, especially when Nick and I fought to the last piece!! Ha ,ha ha  !!!

Serves 2 or 4 as appetizer
2 zucchini
20 grams of pine nuts
200 grams mozzarella
4 tablespoons grated pecorino cheese
15 black olives
2 tablespoons pesto
2 large slices of bread Unleavened
Salt and pepper.
How it works:
Grate the zucchini . Set aside. Cut the mozzarella into slices. Set aside. In a baking tray covered with oven paper, place one cracker and cover with abundant zucchini , mozzarella on top and then pecorino cheese, some ‘pesto, pine nuts, olives and a pinch of salt. Place another cracker on top and repeat everything. Put in the oven and cook 8 / 10 minutes in oven at 200 degrees.
