fry fish balls

There is no limit to Polpette! I am absolutely convinced of this. But let’s start from the beginning. At the moment my potted herbs are very lush, even though it’s been a very hard year for them. In fact  during the spring my herbs fought off a fierce attack by garden snails. Fortunately many have won the battle but alas the basil  was eaten! It’s natures law, so  I have planted the seeds again. But back to the victorious plants, thyme, parsley and mint for example, they are there splendid and glorious , then I thought I should reward them with the creation of a good fish ball! The first thing  was to unite these three herbs with a white fish. I used the ever stoical cod. In addition, to give a touch of creativity i  then rolled them in Semolina. Wow ! The fish balls were crispy and fresh. They had the real taste of victory! Well done girls.

Serves 4
160 grams of cod
A handful of homemade bread
Milk
5 black olives
A handful of thyme, parsley and mint
1 egg
Salt and pepper
Semolina
Oil for frying
How it works: 
 Soften the bread in milk. Squeeze and put in a bowl. Combine cod, herbs finely chopped, pitted olives, egg, salt and pepper. Mix everything with the blander. Use wet hands to form balls. Roll the bolls in meal flour and fry. Serve hot.
