The British call it comfort food!

Chocolate and pear cake

I love this expression, comfort food  is what makes you happy, its the one  that helps on a cold and depressing day ,  food that you eat comfortably on the couch in total relaxation.Perfect. Unfortunately the only problem is that this kind of food is also the type  that  becomes very uncomfortable to burn off! Talking about calories. … Its the food that when summer comes its still there to keep you company ! … Ok … but every so often  we must  pamper ourselves and when we do, we must not be too paranoid and  just enjoy the comfort that food can give . So here it was my choice  and believe me I did everything, couch, fireplace, book. … And half the cake!

Chocolate and pear cake

Ingredients
100 grams of cereal and oatmeal cookies (or amaretto for a sweeter taste)
170 grams butter
200 grams dark chocolate
200 grams flour
½ packet baking powder
4 eggs
350 ml sweet wine (Moscato wine)
100 grams sugar

How it works:
Peel the pears, cut them into small pieces and marinate in wine for at least 20 minutes, or place the peeled pears without overlapping into a large frying pan, pour in the wine and cook until the complete evaporation of the cooking liquid. Meanwhile, Melt the chopped chocolate and butter in a stainless steel bowl placed over a saucepan of simmering water.  Once melted, remove from heat. Separate the cold eggs, placing the egg yolks in one bowl and the egg whites in another. In a mixer beat the remaining butter with the sugar and egg yolks, until you get a nice creamy smooth and clear, add the mixture of melted chocolate now lukewarm. Pour the mixture into a large bowl and add the finely crushed biscuits, flour and baking powder sifted, stir gently.

In a clean bowl, place the egg whites and whisk until foamy, gently combine the egg whites to the mixture of chocolate , stirring from bottom to top. Divide the batter into two parts, pour the first half  of batter into the prepared pan (buttered and floured)  of 22-23 cm diameter, then cover  with the pears and pour over the rest of the batter. Bake the cake in a preheated oven at 180 ° for at least 40 minutes. Once ready, leave for about 10 minutes into the oven to cool. Remove from oven and serve at room temperature
