Zucchini invasion!

Zucchini, eggplant and stuffed tomatoes are dishes that are used often in Mediterranean cooking. I had the pleasure of eating zucchini and stuffed tomatoes in Greece and I must say that they were very good . Now this is a recipe that, like many others in my blog came to me, passed down  from different generations of my family. I chose a round zucchini, but I could have used a long one. At the moment there are so many zucchini in my garden,so the first zucchini I find I take ! This recipe is very easy to do, so look around in your kitchen, if there are a couple of zucchini let’s give it a go!
Serves 4
4 round zucchini  
350g minced meat
1 spring onion
1 handful of fresh parsley and oregano
8 black olives
3 tablespoons grated Parmesan cheese
½ carrot, diced
Bread crumbs (optional)
Evo Oil
Salt and pepper
How it works:
Cut the zucchini in half and scoop out the flesh from the inside. Finely chop the inside of one zucchini. Put this in a bowl and add the minced meat, finely chopped spring onion, pitted olives, the diced carrot, parmesan cheese and fresh herbs.  Add evo oil, salt and pepper. Mix well with hands. Fill the 8 half zucchini with the mixture of meat. Add a sprinkling of Parmesan over and for those who want more crispness in the final dish, add also a sprinkle of bread crumbs over. A trickle of evo oil finally on top. Bake at 200 degrees for 30 min. Until  the zucchini base becomes soft.

    SINCE I HAVE BEEN OVERRUN W/ZUCCINE, THIS IS ONE RECEIPE I WOULD LIKE TO TRY. WHAT IS MINCE MEAT AND WHERE AND HOW DO U BUY IT. ALSO, EVO OIL???? CAN I USE EXTRA VERGINE. OR PERHAPS YOU COULD COOK FOR ME 1 DAY A WEEK, WHICH WOULD BE BETTER THAN GOING TO A RESTURANT. AGAIN, YOUR SITE LOOKS GREAT, AND I LOVE THE WAY UR EXPANDING.
