A meal fit for a Premier !!

Spaghetti alla puttanesca

 

Why  haven’t i made this dish before? It ‘s a very popular type of pasta,  fast and easy to prepare plus it doesn’t  need any expensive ingredients. Welcome to  Spaghetti alla Puttanesca. Meaning : The Prostitutes spaghetti . As to the origin of the name , the main theory  takes us back to the early Brothels of Rome and Naples where  the owners  cooked this tasty spaghetti in order to attracted more customers  .

Somehow from the work place of these ladies the Puttanesca  arrived in the Italian home.   Coming back to  modern day  Italy , prostitution is once again on every bodies lips….. I wonder what Berlusconi’s favorite pasta dish is?

Serves 4
400 grams spaghetti
Evo oil
2 cloves garlic, finely chopped
1 chili seeded and finely chopped
3 anchovies, finely chopped
1 tspoon capers, washed and deprived from salt. Finely chopped.
100 grams of pitted black olives, finely chopped .
500 grams of canned tomatoes ( or if in season 500 grams of fresh and mature tomatoes, chopped )
1 handful of finely chopped parsley.
Here’s how:
In a frying pan heat Evo oil in garlic, chili and anchovies, leave to cook for a minute and add capers and olives . Mix well and after a minute add the canned tomatoes  plus  1 / 3 of parsley, cook for 20 minutes. Cook the pasta, drain it  and mix with the sauce. Add the remaining parsley. Serve.
