Good morning , 11.00 am this morning I went to get a good espresso coffee in the bar in the village. Maybe you’ll think it is a simple thing to do ….. but nothing seems as easy as it sounds!
The build up to the story: during the week when I go on my run , I have the wonderful opportunity to greet all the Allerona village (or almost). Yes, because in every passing car on the road, the driver’s arm greets me. The doctor, the policeman, the mayor, women who drive their little Ape , anyway a large part of the community (I love this). But unfortunately there is someone who prefers to play the horn and blast me with terror. Now , guess who was in the bar??
After the usual “good morning”, he says to me: now Simona how are your fat goats? and what about your fat dog? I was furious ……. but very gently I said : Tutto bene, thankfully they haven`t exploded yet . And then with great satisfaction ,I ask him : how are things going in your vegetable garden? He said very seriously : good of course … I have already planted peas, beans and potatoes …. but unfortunately a couple of nights ago the moles came and ate everything! oh dear I’m so sorry, I said , so very very sorry…… and smiled at him broadly as I left the bar.
So after my good morning coffee I think there is nothing more appropriate than a good recipe for chocolate mousse, just to make it perfect. Now I go for my run….. BIP BIP….
Serves 4
Ingredients:
75g strong dark chocolate
25g unsalted butter
2 eggs
pinch of salt
Here ‘s how:
Separate the eggs, placing the whites into a large bowl.
Break the chocolate into small pieces and put them in another large bowl set over a pan with a centimeter of barely simmering water. Add the butter and allow both to gently melt. Stir occasionally.
In the meantime, add a pinch of salt to the egg whites and whisk into soft peaks (floppy). In a separate bowl, beat the yolks.
When the chocolate and butter have melted and have been allowed to cool for a couple of minutes stir in the yolks.
With a large spoon fold in the whites in three batches until smoothly combined. Pour into ramekins and refrigerate for a couple of hours to set. Serve whit drops of chocolate.
