While I was cutting that broccoli I thought that all work in the garden will soon start, preparing the vegetable garden for the summer, armed with a hoe  I’ll have to work the soil, fertilize and shortly after sowing. … not a lot of fun, especially hoe! It’s strange to think of all this  when out  the weather is still cold and the sky is gray. But things go in this way in the country, the first daisies are out on the grass and the scent of spring is in the air…. However, I have them cut the broccoli and of course I did something with them ….

Salty cake broccoli and almond

A salty cake with broccoli and almonds, delicious to eat with a salad or a hot soup.

Ingredients
3 eggs
4 tablespoons E.V.O oil
1/2 teaspoon baking powder                                            150 grams of plain flour
200 grams of broccoli
50 grams of grated parmesan
1 teaspoon mustard
50 grams of ground almonds
Salt and pepper

How it works:
In a large bowl place the beaten eggs, oil and mustard, mix everything, add the flour and baking powder together using a pass. Pour the rest of the ingredients (the broccoli should be cut) and work the dough by hand. Pour the mixture into a container for plum cake cover with foil and let rest for 20 minutes in refrigerator. Turn on the oven and bake at 180 degrees for 1 hour

    I am loving your purple sprouting broccoli, and the idea of a hot soup with this sounds just perfect for a cold winters day. Your vegetable garden is doing well, was it much work to grow the broccoli? I am off to the shop for supplies! I hope they have some purple sprouting in Balham, I am planning a parsnip soup.

  • Broccoli, I planted them in mid-September and the good thing about the vegetable garden in winter you do not need to give water .. the winter rain does the job! let me know if you liked the salty tart with the soup.

    The winter vegetable garden reqires less work then. I understand you. I love the purple sprouting, and your plants look very healthy.

    A question, when you say baking powder, do you mean baking powder, the same as we use in the UK or do you mean dried yeast. I asking, as i did not understand that the mixture would rise in the fridge with what we call baking powder.
