Let’s go to Sicily? Wouldn’t it be nice?  Summer is here 100% now, and finally it’s warm, incorrect….it’s backing hot! Unfortunately we don’t have a swimming pool, although a few years ago, we put a beautiful old bath in the garden with a shower head above. Clearly it is forbidden to dive!   We had been talking about our desire to have a nice weekend at the sea . In the list of places we’re dreaming to visit is also Sicily. We were there a few years ago and both loved it. Speaking of Sicily ,also came out a list of delicious  dishes and all the nice things that can be eaten in this region. Any way, we talked so much that  eventually we felt like eating a good Palermo dish. So we did. Unfortunately I could not find fresh sardines at the fish counter,  but I have adapted by using  fresh anchovies. Here is certainly not like the fish market in Palermo! For the rest I used all the ingredients required and the result was excellent. So today,  I’m sitting in the outdoor bathtub, looking forward to our Sicilian dinner, but tomorrow who knows!
Serves 4
200 grams wild fennel
350 grams fresh anchovies (sardines if you find them)
1 medium onion, chopped
2 salted anchovies, rinsed and boned
1 tablespoon raisins
1 tablespoon pine nuts
3 tablespoons blanched almonds, toasted and chopped
1 sachet saffron
300 grams Bucatini pasta
4 tablespoons breadcrumbs
Evo Oil
Salt and pepper
How it works:
Boil 3 liters of water with a teaspoon of salt. Add the wild fennel for 15 minutes. Drain  and keep the water (you will need it for cooking the pasta) . Coarsely chop the wild fennel. Keep aside. Clean the anchovies (or sardines). In a frying pan cook onion with Evo oil, add the anchovies and mash with a fork. Add raisins, pine nuts, almonds and fresh anchovies, Salt and pepper. Cook for 5 minutes, add the fennel and saffron diluted with a teaspoon of water. Stir gently and cook for 5 minutes. Cook the pasta using the cooking water from the fennel. Put the breadcrumbs in a pan and toast until lightly brown in color. Drain the pasta, add to the mixture of fish, mix well and sprinkle with the bread crumbs. Serve
