Passing time with passata

CIAO , I’m back.

Did you miss me? I hope so….anyway , after a month of a relatively relaxing  holiday, here I am again.                                                  August has been very productive. My vegetable garden has been generous this summer and demanded quite a lot of work…… MAMMA MIA. So let’s start: with green beans I made three different types of pesto and then with the basil a classic pesto, all now frozen. With the eggplants, apart from grilling them and putting in a jar with EVO , I also  made some  Parmigiana ,now also frozen… … .. Then  with the plums we made chuckney . … with the blackberries , panna cotta  … BUONA ….  the remaining blackberries  I put into bags and they are also now ….. frozen !. My poor hands.
 The most time consuming work came from the tomatoes. Sun-dried  and  passata. So far I’ve prepared 63 jars of tomato passata!  … … With more coming….
